Kashiwaya Ramen Noodle Shop in Nishiki Area

Kashiwaya (かしわ家) is a ramen noodle restaurant in Nishiki area. It is one of the oldest restaurants in Nishiki area, which has been in business for 33 years! There is a reason for their long popularity!

The restaurant menu is quite simple. There are mainly three types of dishes: noodles, meat and rice combo, and rice bowls. The portion is more than satisfying and the taste is great as well!

Their ramen noodles are featured in some local magazines. The chef's proud soup base is made from chicken, pork, seaweed, small dried sardines (Niboshi), bonito, dried shrimp, flying fish, and some vegetables. The most popular ramen is Shiro-miso Ramen (left top), whose soup is seasoned with white Miso. Another variation with Aka-Miso (red miso) is the second popular. Tanmen (bottom), on the other hand, is simply seasoned with salt and served with plenty of vegetables.
